MONDAY MEAL PLANNER March 8, 2010

This week's healthy meal ideas:

MONDAY- half ground beef/half ground turkey burgers on the grill with sweet potato fries (sliced sweet potatoes roasted in the oven) and fruit salad

TUESDAY- chicken and veggie soup (if you read my blog earlier, you will know I made this as part of my meal prep monday) whole grain rice, and crusty whole grain rolls

WEDNESDAY- black bean nachos (cut whole grain tortillas into strips and toast in the oven, heat black beans, onion, and tomatoes to pour over nachos, sprinkle with low fat cheese)

THURSDAY- whole grain spaghetti and meatballs with green salad

FRIDAY- chicken kabobs on the grill (chunks of chicken, tomato, pepper and onion on skewers), veggie tray with low fat ranch dressing for dipping, pasta salad (whole grain pasta, olives, peppers, tomato and low fat Italian dressing)and frozen bananas rolled in oats and dipped in honey for dessert

BREAKFASTS: Cascadian Farms Organic fiber bars, Cascadian Farms Organic purely O's cereal or hard boiled eggs and sliced fruit

LUNCHES: turkey wraps (turkey, lettuce, tomato, cheese rolled in a whole grain tortilla), natural PB&J sandwiches, yogurt, apples slices

SNACKS: raisins, clementines, carrot sticks, cheese cubes

MONDAY MEAL PLANNER March 1, 2010

Healthy Meal Ideas for this week:

If you read my blog this morning, you know that today is my meal prep day. Here are the healthy meal ideas I am planning with the food I am prepping today:

MONDAY- Vegetable Bean Soup (recipe below -using red beans instead that I cooked this morning), green salad and whole grain rolls

TUESDAY- grilled salmon in lemon and garlic sauce on the grill, corn on the cob and steamed green beans (used frozen not canned, Much more yummy!)

WEDNESDAY- bean and rice enchiladas (whole grain tortillas, red beans, rice and onions with salsa and cheese melted on top) extra rice and beans on the side and skinny margaritas (tequila, lime juice and club soda)

THURSDAY- picking up Subway sandwiches for the family before I leave to go see MAMA MIA!!

FRIDAY- Mahi Mahi on the grill, baked potatoes, fruit salad

BREAKFASTS- hard boiled eggs and cantaloupe (my daughter loves this, so I just go with it), Fiber One Bars or oatmeal with cinnamon

LUNCHES- leftovers or turkey sandwiches and Stacy's pita chips for the hubby and me, PB&J, Whole Grain goldfish and sliced apples for my daughter

SNACKS- popcorn, cheese and apples

MONDAY MEAL PLANNER February 22, 2010

Here is this week's healthy meal ideas:

MONDAY- top sirloin on the grill, baked sweet potatoes with cinnamon, green salad

TUESDAY- Vegetable Lover's Chicken Soup (recipe below), whole grain crusty bread and sliced cantaloupe

WEDNESDAY- Lemon Garlic Tilapia (recipe below), roasted broccoli and squash

THURSDAY- Vegetable Lasagna (recipe below) with whole grain garlic bread

FRIDAY- Beef and Vegetable Kabobs on the grill, corn on the cob and green salad

BREAKFASTS: Quaker Fiber and Omega 3 bars or hard boiled eggs and sliced apples

LUNCHES: turkey roll-ups (on whole grain tortillas) or PB&J with Stacy's Pita Chips OR Progrsso Light Chicken Noodle Soup

SNACKS: Popcorn, fruit or almonds (still have a couple cans left from last week!)

MONDAY MEAL PLANNER Febraury 15, 2010

This Week's Healthy Meal Ideas:

MONDAY- Lemon and garlic marinated salmon (I make a marinade of olive oil, lemon juice and garlic) with roasted broccoli, zucchini and yellow squash and whole grain bread (part of the baton I bought this week in the deli)

TUESDAY- Chicken & Sun-dried Tomato Orzo (recipe below)

WEDNESDAY- Vegetarian Chili (recipe below)

THURSDAY- White Chicken Chili (recipe below) I used my own chicken broth I had in the freezer instead of buying organic broth (remember my prep day at the beginning of the month when I made all that veggie and chicken broth??)

FRIDAY- I am hoping we get to eat out!! PAYDAY!!!!!

BREAKFASTS: Daughter- Cascadian Farms Organic Honey O's, hubby and me either Quaker Fiber bars or hard boiled eggs and sliced apples

LUNCHES: leftovers, PB&J, or Chicken Noodle Soup

SNACKS: Almonds (remember the great deal I got on them this week?), Stacy's Pita Chips, Organic Raisins, fruit

MONDAY MEAL PLANNER February 8, 2010

This week's Healthy Meal Ideas:

MONDAY- turkey sandwiches and whole grain tortilla chips with fresh salsa (using the same recipe from the Super Bowl)

TUESDAY- Lemon Garlic Marinated Shrimp (recipe below) with tossed salad and whole grain rolls

WEDNESDAY- Curried Wild Rice and Squash Soup (I am adding chicken to mine!) (Recipe below)

THURSDAY- Baked Lemon Tilapia (I marinate it in lemon juice and garlic all day) with roasted sweet potatoes (slice, sprinkle with cinnamon and sugar and bake for about 20 minutes) and steamed broccoli

FRIDAY- Black bean nachos (always a hit at my house) -whole grain tortillas cut and put in oven, black beans, corn, chopped tomato and onion

BREAKFASTS: hard boiled eggs, whole grain bagels with natural peanut butter and sliced apples or Cascadian Farm Organic Cereal with Organic milk

LUNCHES: PB&J, chicken noodle soup, and whole grain goldfish for my daughter and turkey sandwiches,green salad, and leftovers for the hubby and me

SNACKS: bananas, oranges, apples, string cheese, organic raisins and raw peanuts

SUPER BOWL SUNDAY Meal Plan!

Super Bowl Sunday can be fun without being fattening. Here is my healthy meal ideas for the big game:

1. Whole Wheat Tortilla Chips with fresh salsa (RECIPE BELOW)

2. Veggie tray with ranch yogurt dip (buy plain yogurt and add a packet of Hidden Valley Ranch powder)

3. Chicken Tenderloins marinated in hot sauce and baked in the oven (instead of buffalo wings)

4. Chili made with ground turkey instead of beef

5. Spicy Asain Lettuce Wraps (they sound more difficult than they really are!)(RECIPE BELOW)

6. DRINKS! We do plan on having a glass of wine or a beer (or two!) Check out this link for diet-friendly drinks!

MONDAY MEAL PLANNER February 1, 2010

Here is this week's healthy meal ideas:

MONDAY: Chicken Scampi (recipe below) I am using the boiled chicken from the chicken broth I made today and just making the marinade portion of this recipe. I am also using 2 bags of the Steamfresh frozen rice, carrots and peas that I got on sale a couple of weeks ago. I am going to microwave the rice and veggies, add the chicken and pour the marinade over the whole thing.

TUESDAY: Lemon Garlic Tilapia-Kroger had tilapia BOGOF this week(recipe below),whole wheat couscous, steamed broccoli ($1.50 bag from this week's Cascadian Farm sale)

WEDNESDAY: Herbed Spaghetti Squash (recipe below. I am adding a can of crushed tomatoes and parm cheese on top as well) and green salad

THURSDAY: Chicken Cacciatore in the crockpot (recipe below) whole grain pasta and green salad

FRIDAY: do over for my dear daughter's birthday since her party was canceled due to the snowstorm!)

BREAKFASTS: hard boiled eggs, whole grain bagels with natural peanut butter and sliced apples or Cascadian Farm Organic Cereal with Organic milk

LUNCHES: PB&J, chicken noodle soup, and whole grain goldfish for my daughter and turkey sandwiches,green salad, and leftovers for the hubby and me

SNACKS: honeydew, oranges, apples, string cheese, organic raisins and raw peanuts

FRIDAY: Birthday Party fun for one of my little ones!! (Probably Chuck E Cheese!!)

BREAKFASTS: hard boiled eggs, whole grain bagels with natural peanut butter and sliced apples or Cascadian Farm Organic Cereal with Organic milk

LUNCHES: PB&J, chicken noodle soup, and whole grain goldfish for my daughter and turkey sandwiches,green salad, and leftovers for the hubby and me

MONDAY MEAL PLANNER- Healthy Meal Ideas January 11, 2010


Here is this week's healthy meal ideas. I spent $72 at Kroger (see yesterday's blog). This is week 2 of our cleanse, so once again these are all vegan meals!

Here is my meal plan for this week:

MONDAY: Bean Burritos (whole grain tortillas, red beans, green onion, tomato, hot peppers), brown rice, black beans

TUESDAY: whole grain spaghetti with tomato sauce (made with no salt added tomato sauce, sauteed mushrooms, oregano, and onions) wit garlic bread (Ezekiel 4:9 bread with olive oil and fresh garlic)

WEDNESDAY; Vegan stew (red beans, lentils, hot pepper, potatoes, carrots, onion, tomato, and basil on the crock pot)

THURSDAY: Salad Bar Night!(chop every veggie available with olive oil and balsamic vinegar and have everyone create their own salads) with whole grain rolls

FRIDAY: NACHOS! Take whole grain tortillas, cut into slices and toast until crisp. Add black and red beans, onion, green peppers, and tomatos

BREAKFAST:

Cinnamon Raisin Ezekiel bread with honey or natural peanut butter, fresh fruit

instant oatmeal with cinnamon and raisins

Cascadian Farm Organic Cereal with organic skim milk

LUNCHES: Leftovers, natural peanut butter sandwich on Ezekiel bread, pasta salad (whoel grain penne pasta with green pepper, cherry tomato and olive oil/balsamic vinegar

SNACKS: raw nuts, raisins, fresh fruit
