Whole Grain vs White Bread: Which Is Better?
Whole Grain vs White Bread. We know we should look for whole grain. But, why?
Here are the reasons:
1. Both white bread and whole grain bread are made from the wheat berries. But, unlike whole grain that is made of all three parts of the wheat berry, white bread is made only of the endosperm (the starchy part between the bran and the germ). Because of this, whole grain contains much higher amounts of fiber, vitamins [B.sub.6] and E, magnesium, zinc, folic acid and chromium.
2. What about "enriched" flour? Don't they add the nutrients back? About 30 different nutrients are removed duing the making of white flour and only 5 must be added back by law ( iron, niacin, thiamin, riboflavin and folic acid). That means it would take 7 or 8 slices of white bread to equal the same amount of fiber in one slice of whole grain!
3. The higher fiber in the whole grain bread helps keep insulin levels low unlike white bread that spikes blood sugar.
BOTTOM LINE:
Bite for bite, whole grain bread is BY FAR a more nutritious choice for all of us!
